EGG FRITTATA

Make a pan on Sunday morning and you'll have a Frittata for the rest of the week ready to go. Tastes great reheated or cold served with a little salsa and a dollop of sour cream.

6 whole eggs

6 egg whites

3 Applegate Farms chicken breakfast sausages (or other organic, nitrate and GMO free sausage)

1/2 cup of mushrooms 

1/2 cup of bell peppers

1/4 cup of chopped onion

3/4 cup of shredded cheddar cheese 

Beat the 6 whole eggs and 6 egg whites in a mixing bowl for one minute. Pour into a 9x12 baking dish that has been sprayed lightly with olive oil. Defrost and cut up the veggie sausages and sprinkle evenly in the pan along with the mushrooms, onion, and cheese. Bake at 325 degree preheated oven for 20-30 minutes until knife inserted comes out clean.
