These pacakes are so yummy and made with almond meal instead of flour. So they have more fiber and protein and less carbs. They taste like banana bread and don't even need syrup!
1 medium banana
1/4 cup of almond meal
1/2 tsp of vanilla extract
1/2 tsp of cinnamon
pinch of pumpkin pie spice or nutmeg
Beat all ingredients for about one minute until smooth. Heat skillet on medium heat and oil lightly (I like to use coconut oil) Keep pancakes small (only 2 Tbs of batter) and flip after about one minute until the bottom is golden brown. The pancakes will NOT bubble on top so don't wait for that to happen or they will burn. The top will be a little runny still so flip carefully. Makes 12 sliver dollar pancakes (2 servings)
Per serving (6 pancakes) 175 calories, 8 grams of protein, 5 grams of fat, 3 grams of fiber, 16 grams of carbs
