The movie was great and this dish is even better! Ratatouille is normally a french dish, but I put my Italian spin on it.  It's very hearty and filling and even has a little pizza crust on top to make it (somewhat) sinful.

1 medium eggplant

2 portobello mushrooms

2 bell peppers (I prefer orange or yellow) 

4 small yellow squash

1 medium white onion

2 tsps of minced garlic

1/2 cup of dry white wine

2 cups of sliced cherry tomatoes

4 Italian style chicken sausages cut into chunks (look for brands that use no antibiotics, nitrates or msg and that are roughly 120 calories each)  You may use raw or fully cooked ones.  I used Brat Hans pre-cooked Mild Italian Chicken Sausage (Whole Foods)  

1 cup of tomato sauce (look for ones that contain under 60 calories and 3 grams of sugar per 1/2 cup)  I like Rustico Pomodoro Pasta Sauce (Trader Joe's)

6 oz of Italian blend cheese

6 oz of refrigerated pizza dough  (1/2 of a pre-made store bought)  Gelson's sells Wolfgang Puck's for about $2 and Trader Joe's has good ones too


Preheat oven to 400 degrees

Chop first 5 ingredients into large chunks and sautee in a large pan that has been lightly sprayed with olive oil.  Add the garlic and white wine. Cover and and cook for about 15 minutes, stirring occasionally, until the vegetables are cooked down and start browning. 

Next add the sausage chunks and the tomatoes.  Cook until sausage is fully cooked or pre-cooked sausage is lightly browned.  Add the tomato sauce and cook for another minute.

You will now need 6 ramekins (8oz size as pictured above) or you can use a 10 inch pie dish as well.  Spray the dishes lightly with olive oil on the rims so the pizza crust won't stick. Spoon the ratatouille evenly amongst the cups or put whole mixture into the pie dish.  Knead and stretch out the dough and place over all 6 ramekins or over the pie dish.  (If making the individual ones as pictured above you'll simply cut around the dough and form around each ramekin)  

Bake in oven for 10-12 minutes until the crust starts browning.  Then remove and sprinkle the cheese evenly amongst the individuals pizza crusts.  Bake for another 5 minutes or until cheese is melted.

Remove and let cool for about 20 minutes.  They will be very hot inside!  So make sure you let them cool.
