Looking for a quick and easy way to satisfy your sweet tooth without undoing all your hard efforts? I've got just the thing! I love dark chocolate, and this dessert hits the spot. Instead of wheat flour, it's made with coconut flour which has more protein & fiber and is lower glycemic (meaning it won't spike your sugar levels) The egg whites pack even more protein, while the raw cacao powder and berries are chock-full of antioxidants & fiber. Just pop it in the microwave for 2 minutes and you've got yourself a healthy dessert in minutes. It's a win-win!
Here's what you'll need (makes 2 servings)
Medium sized mixing bowl
2 Coffee mugs (or medium sized ramekins) lightly sprayed with coconut oil spray (or olive oil spray)
4 TBS coconut flour
2 TBS raw cacao (or unsweetened cocoa powder)
1/2 cup plus 2 TBS unsweetened vanilla almond milk
4 TBS egg whites
1/4 tsp cream of tartar
1/2 tsp baking soda
1/2-1 packet of Stevia (to taste) *I don't like it too sweet so I use 1/2 a packet
1/2 cup fresh or defrosted frozen berries
Okay, now it gets ridiculously easy. In the mixing bowl blend everything well (except the berries) and divide evenly between the two coffee mugs. Microwave each one for about 2 minutes or until there's no more gooey-ness. (If I'm just making one, then I put the other one in the refrigerator un-cooked) Let cool to your desired temperature. I like it hot or cold depending on my mood. Lastly, I top it off with berries. I actually prefer defrosted frozen berries because it's more saucy. If you want to be a tad more indulgent, push about 6 semi-sweet chocolate morsels in the cake right after it's cooked for bites of melted chocolate goodness. Now of course it won't be sugar or dairy-free anymore, but sometimes you just need a tad of the real thing ;)
